A refined reconstruction of the cookie my mom made routinely for my father, James. Purposefully toasted coconut, Organic Rolled Oats, Cultured Butter and my mom’s secret ingredient made this a family favorite accompanied with a pot of tea. To fancify mom’s recipe I’ve added 2 varieties of coconut, 2 varieties of sugar, Nielsen-Massey Pure Vanilla, 35% Ivoire, Les Gourmands from Valrhona of France and caramelized sugar.
